items: items 1: content: I love this diffuser. We had an old tin one, with the wood handle, and we used it until it was caved-in in the middle and half the holes were plugged by scale. I was a bit hesitant to buy the stainless steel one, thinking it might not conduct well enough, and it was thinner than the tin models. I needn't have worried. It works like a charm, and the stainless steel is much stronger than the tin, despite being thinner and less built-up. I've even grown to like the detachable handle. So, if you have an electric burner stove and you're a bit lazy like me, and don't like to have to stand there all the time stirring, this might be just the thing for you.

This little gadget will save many a meal by preventing burning delicate sauces, overheating chocolate and just keeping the heat evently distributed no matter what cookware you use. It's especially wonderful with Le Creuset as well as stainless, stainless-clad aluminum and glass or ceramic pots. Ace Hardware used to keep these things in stock, but at least they are still available through their online store. Get one for yourself and everyone on your gift list. New cooks will especially benefit from this low-tech method to save a meal.
